Two days ago I saw a recipe for a revolutionary banana bread, water dropping in my mouth I promised to myself to make my own version soon.
This bread is gluten free and vegan. I decided to use almond and coconut flour to give the bread a soft texture and rich flavor. You can easily make the bread at previous evening, like I did, and enjoy it straight away for you breakfast. This morning we ate almost the whole bread. Banana Bread (V,Gf)
5 mashed bananas + 1 banana on the top
3dl oat flakes
1dl almond flour
1dl coconut flour
1tl baking soda
pinch of salt
Heat the oven at 200C. Cover the baking pan with parchment paper. Smash the bananas. Mix the oat flakes, almond and coconut flour. Add the baking soda and pinch of salt. Add the mashed bananas and mix well. Pour the mixture into the pan and decorate with banana slices. Bake about 30 minutes until golden. Put aside for some minutes before serving. Enjoy!
